English Scone with Raisins
– All purpose flour 250g
– Baking powder 8g
– Butter 90g
– Icing sugar 70g
– Salt 5g
– Milk 60g
– Egg, beaten 70g
– Raisins 30g
– Egg, beaten, to glaze
– 6cm plain round pastry cutter
1. Preheat the oven to 210°C.
2.Cut the butter into 1cm cube. Mix the flour and baking powder in a large bowl. Put butter into it, and rub together with your fingertips, until the mixture resembles fine breadcrumbs. Put it into the fridge and rest for 20 minutes.
3.Soak the raisins in hot water for 15 minutes, and pat dry with kitchen paper. In another bowl, prepare the milk & egg mixture: add the cold milk, and mix together with salt and icing sugar until dissolve. Add the whisked egg, and mix well.
4.Take the butter mixture out from the fridge. Add in the milk mixture in 3-4 times, bring it together with your hands. Press the dough together, add the raisins and mix together.
5.Turn it out onto a lightly floured work surface, roll out the dough to a thickness of 2.5cm. Cut out scones using pastry cutter. Place them on the baking tray and graze with the beaten egg, and bake for around 13-15 minutes. Eat them on the day they are made!
